Having bought and driven Polo (Petrol version) for the last 4 months (7500 km) I can safely assure you that Polo is the best choice.
I have also test driven punto (Petrol), but not i20. But the quality, finish and mileage ( I got upto 17.03 kmpl against company assured 17.3 kmpl while driving on a highway. City rides (Bangalore) gives 11 to 14 kmpl (with AC on)
I understand that there are not much Polo cars on the road; but it may be due to the controlled release of the same by the company.
Dealership and service stations will increase in due course.
However, the company recommending first service after 15,000 km OR 1 year speaks a lot on the company's confidence on its quality!!

I WOULD PREFER 1 20 AMONGST THE THREE. HOWEVER THE RITZ IS ALSO A STRONG CONTENDER FOR THE BEST CAR. THE QUALITY OF THE SPARES AND ALSO RELIABILITY GIVES IT AN UPPERHAND. 1 20 IS MUCH AHEAD OF TIMES. BUT THEY ARE NOT SUITABLE FOR THE INDIAN POT HOLED ROADS. IT IS SAFE TO BUY IT AFTER AFTER INDIA HAS A GOOD ROAD POLICY.

All the 3 cars that you shortlisted are built according to the European safety Standards. if you buy the Hyundai i20 you will get the 2nd best after sales support and cheap spare parts. The Fiat Grande Punto will get you good build quality but resale is on the lower side. Volkswagen Polo is also a very good choice if you want a tough car, the only drawback is the limited sales network which is fast growing. All the 3 cars have diesel options while the i20 and the Punto are the most powerful hot hatches.
Here you may compare Fiat Grande Punto, Hyundai i20 and Volkswagen Polo please open the given link.

Hey, Wagon R has been a great car since a long, it has been liked by customers across India since a long time. However, there are a few cons with Wagon too
Quality of materials used in the interior could've been better. Feels low rent.
NVH levels aren't the best. Lot of engine noise filters into the cabin.
Brakes feel spongy. Could have done with better pedal response.
No diesel motor. Tata Tiago gets a diesel engine in the same price range.
Rest, it is easy to maintain and also delivers good fuel economy.
